Silver needle white tea from Fujian Province, China
This is the most popular and highest-quality white tea ever produced in Fuding, Zhenghe of Fujian Province since the year of 1880. In the process of its production, only top fluffy buds of leaf shoots from Da Bai cultivar are picked and dried after wilting and light fermentation. There is very little produced of it. The fluffy tea leaves are shinny, reminiscent of silver and silver needles, so they are known as Silver Needle, and very popular with Westerners. This Baihao Yinzhen is produced from the organic leaves of a cultivar of Fujian’s Da Bai cultivated in Fuding of Fujian Province. It has a fresh, mellow, refreshing taste, and refreshing fragrance as well.
It contains polyphenol which has an antioxidant effect, the same as wine polyphenol, and it also has an antipyretic effect, removing extra heat from the body.
A hear-resistent glass teapot or tea cup with a lid id recommendable, so the fragrance of Baihao Yinzhen can be enjoyed to the fullest. It is also visually pleasing to see some beautiful leaves vertically floating up and down in the heat-resistant glass.
TASTING NOTES
A sweet, honeyed, muscat-flavored, floral, light, pampering, refreshing white tea. The tea’s fresh, floral flavors linger long after drinking. What sets this type of tea apart from other white teas is its ethereal, silky-smooth, gentle flavors.
It's a special tea that is beautiful both in flavor and in aesthetics. The taste and fragrance of Baihao Yinzhen are parallel; the scent promises a fruity flavor like Starking apples and the taste delivers. This special flavor is still present after 4-5 infusions. It is a truly enjoyable tea, not very complex, its simplicity and charm is the perfect balance on a busy day.

How to prepare
3 g 0.1 oz 0.7 US tsp
85°C 185°F
100 ml 3.4 fl oz 100 cc
30 sec.~
STEP 1) Warm your teapot. Pour boiling water into a gaiwan or teapot, let it sit for a little while, then discard all the water.
STEP 2) Brew (no need to rinse this tea). Pour hot water on the tea leaves (about 85°C) and brew for 30 seconds.
STEP 4) Serve. Pour the tea into a pitcher, and then into cups.
STEP 5) Brew again.
❖ For the second infusion, steep it for about half the time of the first infusion. For every other infusion after that increase the steeping time (from the time of the first infusion).
❖ Make sure to open the lid of the teapot between infusions, to prevent the leaves from cooking.
❖ This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the most.

Another excellent tea from Sazen. Baihao Yinzhen is a very flavorful white tea. This tea is clear and clean with no dust or bits of leaf. It's color is golden like a glass of white wine or champagne and it's taste is very mellow. Good for three or four brews. The only reason I gave 4 stars instead of 5 is that I've had other excellent tasting white tea of this type at a significantly lower price. Overall this one from Sazen is top notch but it is also expensive. If you want a very clean tasting, mellow tea with uniform leaves and no bits mixed in this may be worth the price.
